Ingredients
  1. 1 ½ cups flour
  2. ½ cup milk
  3. 2 teaspoons baking powder
  4. ½ cup sugar
  5. 1 egg
  6. 1 ½ cups blueberries, fresh or frozen
  7. 1 teaspoon vanilla
  8. ½ teaspoon salt
  9. 4 tablespoons butter or margarine
  10. Streusel topping
  11. ¼ teaspoon cinnamon
  12. 2 tablespoons butter/margarine
  13. ¼ cup chopped walnuts
  14. 2 tablespoons brown sugar
Instructions
  1. Sift flour, baking powder and salt together. In a large bowl, cream butter with sugar until fluffy. Beat in egg with vanilla. Stir in flour mixture alternatively with milk. Fold in blueberries. Spoon into muffin tin, filling each about two thirds full.
  2. Spring back when lightly pressed with fingertip. Remove from pan, cool on wire rack.
  3. Topping: In a small saucepan melt butter. Remove from heat, stir in brown sugar, cinnamon and walnuts. Sprinkle streusel topping over muffins. Bake in preheated hot oven (400°F) for 20 minutes or until top springs back when lightly pressed with fingertip. Remove from pan, cool on wire rack.

Ingredients
  1. 1 teaspoon vanilla essence
  2. 175g brown sugar
  3. 2 large eggs
  4. Grated rind of ½ lemon
  5. 2 tablespoons cocoa
  6. 225g flour
  7. 1 teaspoon cinnamon
  8. About 100ml milk
  9. 170-200g blueberries
  10. 1 teaspoon baking powder
  11. 150g butter
  12. pinch salt
Instructions
  1. Preheat oven to 180°C.
  2. Cream butter and sugar until light and fluffy.
  3. Beat in rind and vanilla, then the eggs one by one.
  4. Sift together flour, baking powder, cocoa, cinnamon and salt.
  5. Stir into creamed mixture with blueberries.
  6. Finally stir in milk to make a soft batter.
  7. Spread in prepared 22cm tin. Bake for 50-55 minutes.
  8. Cool in tin for 5 minutes then turn on to a rack to cool.

Blueberry Chocolate Brownie
I substituted a handful of blueberries for chocolate melts in the original recipe.

  1. 100g melted butter
  2. 2 eggs
  3. 1 cup sugar
  4. 1 teaspoon Vanilla Essence
  5. 3/4 cup flour
  6. 1/4 cup cocoa powder
  7. 1 teaspoon Baking Powder
  8. Handful of blueberries
Instructions
  1. Pre-heat the oven to 180 degrees C.
  2. Combine all ingredients except the blueberries.
  3. Mix well.
  4. Put the mixture into cake tin and dot the blueberries on top.
  5. Bake for 20 minutes.
  6. Don't overcook.

Blueberry Sour Cream Pie

Blueberry Sour Cream Pie
This easy recipe was given to me by my dear friend, Chris, which was her late sister's favourite blueberry recipe.

  2. 100g soft butter
  3. 1/2 cup sugar
  4. 1/4 cup ground almonds
  5. 1 egg
  6. 3/4 cup flour
  7. 1 teaspoon Vanilla Essence
  8. 1 1/2 teaspoons Baking Powder
Instructions
  1. Pre-heat oven to 180 degrees C.
  2. Mix the above ingredients in a bowl until a soft clump is formed.
  3. Pour into a 20cm round cake tin with a bottom unhinger.
  4. Use well-floured hands to push the mixture into the bottom of the tin and up the edges a little.
  5. Custard: Mix 500g of light or full sour cream, 1 teaspoon Vanilla Essence, 3/4 cup sugar and 2 - 2 1/2 tablespoons custard powder.
To assemble
  1. Sprinkle 500g blueberries over the base, then pour the custard on top.
  2. Bake for 50 minutes or until the pie looks set from the edge into the centre for about 2 cm. The mixture looks wobbly in the middle but sets on cooling.

Blueberry Muffins
My first neighbour, Jean, gave me this recipe over 30 years ago, when I had never seen or tasted blueberries. Little did we know back then, that one day I would be living on a blueberry farm and making this recipe hundreds of times.

  1. 1 egg
  2. 3/4 cup milk
  3. 1/3 cup oil
  4. 1 teaspoon vanilla essence
  5. 1 3/4 cup flour
  6. 2 1/2 teaspoons baking powder
  7. 2/3 cup sugar
  8. pinch salt
  9. 1 cup blueberries
Instructions
  1. Preheat oven to 190 degrees Celsius.
  2. Beat egg, then add milk, oil and vanilla essence.
  3. Add to dry ingredients - flour, baking powder, salt, sugar.
  4. Mix well.
  5. Fold in blueberries.
  6. Bake in greased muffin tins for 25 minutes.
